Wet Process: Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-011P and LOY-006P. The process lasted 13.1 days under controlled conditions in an average temperature of 8.5°C.

Dry Process: 20.4 days  in temperature and humidity-regulated drying rooms.
